Curried Prawns

These delicious curried prawns make a starter with a difference or a tasty festive treat.

Ingredients

For the dressing

4 tbsp mayonnaise

2 tbsp salad cream (optional)

2 tbsp tomato ketchup

Worcestershire sauce to taste

For the prawn cocktail:

Roughly 900g/2lb mixed cooked (a mixture of large and small will give the best taste/texture)

½ Iceberg lettuce, shredded as finely as you can get it

Cucumber, finely chopped

Bunch of spring onions, finely chopped

5 medium sized eggs

Mayonnaise

Curry powder

To garnish:

½ lime or lemon, cut into wedges

small handful of fresh chopped herbs, coriander is good (optional)

Whole unpeeled prawns (optional)

½ red chilli de-seeded and finely chopped

Preparation

  1. Place all of the dressing ingredients into a bowl and mix until combined store in the fridge until ready to serve.
  2. Put eggs in a pan of cold water, bring to boil and simmer for six minutes.
  3. Shell and chop the eggs, add the mayonnaise and a couple of spoons of curry powder to taste.
  4. Place shredded lettuce in bowls, top with cucumber, spring onion, curried egg, prawns and a good dollop of dressing.
  5. Garnish with a slice of lime, lemon, coriander leaves red chilli or whatever else you fancy.
